Frivolous Rheinhessen

Rheinhessen, formerly the land of the so-called Liebfraumilch, is alive and kicking these days. Quite a lot has changed there in 50 years. Today it is a playground of fine wine, made from pinot blanc, silvaner, pinot noir and riesling. Quality plays the main role. Salad with strawberries and asparagus

White asparagus and red strawberries are the ingredients that make your mouth water in spring. That's where you drink a Riesling from Rheinhessen! 

Preparation: 15 minutes

What you need (4 people)

  • 450 g white asparagus
  • 3½ tbsp lemon juice
  • 3½ tbsp olive oil
  • 1½ tsp honey
  • salt, freshly ground pepper
  • 350 g strawberries
  • 3 pinches of cayenne pepper
  • 1½ tsp coarse mustard
  • 150 g goat cheese (roll), thinly sliced
  • 3 tbsp garden cress

This is how you make it

Peel the asparagus with an asparagus peeler or thin peeler (this works best if you lay the asparagus flat and then peel from top to bottom). Cut off the woody end. Cut the asparagus into long angled thin slices and put them in a bowl. Make a dressing from 1½ tablespoons lemon juice, 1½ tablespoons olive oil, honey, salt and pepper. Whisk well and spread over the asparagus slices.
Wash the strawberries, pat them dry, remove the crown and slice 250 grams. Put the rest of the strawberries in a measuring cup. Add 2 tablespoons of lemon juice, 2 tablespoons of olive oil, salt and cayenne pepper. Puree with a hand blender to make a dressing. Stir in the mustard.
Cut the goat cheese into 12 thin slices. Divide the asparagus and strawberries among four plates. Place the goat cheese slices on top and drizzle with the strawberry dressing. Garnish with cress.
