Goat cheese salad with beetroot and blackberries
Preparation 15 minutes
You will need this for 4 people
- 125 g fresh goat's cheese (7 rounds)
- 2 tbsp za'atar spice mix
- 100 g salad mix
- 200 g precooked red beets
- 150 g blackberries (keep 6 for the dressing)
Dressing
- 6 blackberries
- 1 tbsp red wine vinegar
- 2 tbsp olive oil
- generous pinch of salt
This is how you make it
First, make the dressing. In a small bowl, mash the blackberries into a puree. Add the vinegar, olive oil and salt and stir well. Set aside.
For the salad, halve the goat cheese rounds and roll them into smooth balls. Sprinkle the za'atar in a deep plate and roll the balls through it, so that the spice mix adheres well. Place the balls in the fridge until use.
Cut the beetroot into wedges. Place in a spacious salad bowl or on a wide board (see photo). Divide the blackberries on top. Sprinkle with pepper and with the dressing. Finally, place the goat cheese balls on top and serve immediately.
