'French Stephan Asseo wanted to make wine in Bordeaux from cabernet sauvignon and syrah. That was not allowed by the AOC grape police, of course. Did that stop the rebellious winemaker? Of course not. Some 25 years ago, he said adieu and started a new adventure in Paso Robles, California. To enjoy doing what he felt like doing. Blending French and Italian grape varieties, for example. Or adding some white to reds and experimenting with acacia wood and amphoras. A recipe he uses to create classic wines with American muscle. Critics give them between 94 and 100 points every year - for what it's worth. Add to that my points for nice and stubborn and you have the recipe for a class on its own.'
