Being sentenced to probation. It's less punishment than jail, but you still have to keep quiet, listen nicely, don't make mistakes... We don't bother and sit it out patiently. -TEXT + IMAGE EDITORS

Blushing wine

Reception

Our salivary glands were already starting to work when importer Fourcroy Netherlands reported that on 1 March, the new harvest had arrived. BY.OTT Côtes de Provence Rosé 2021. A few years ago, we also got to taste wines from Domaines Ott. And these are not just candy rosés, but characterful dry wines of a high standard. They pair excellently with fine food. Hence the reception at the Amstel Hotel by maître d'hotel and sommelier Ronald Opten.

Theory

The story begins with Marcel Ott in 1896. His dream: a winery in Mediterranean territory. After all, this farmer himself came from Alsace. His business, which grew to three wineries, is now managed by the fourth generation. Jean-François and Christian Ott. Domaines Ott is part of champagne house Louis Roederer and has become a prestigious brand.

Instructions

Christophe Coppola Renard came over from France on behalf of Domaines Ott to taste the wines. Combinations with food can be left to Ronald Opten. For example, the main course is tender chuck steak with parsnip, carrot, bay leaf and thyme accompanied by Bandol Rouge Château Romassan 2017 - Bandol is considered the top region for red wines in Provence. A full flavour with blueberries and blackcurrants with some minerality from the sandstone soil in the finish.
