The ultimate Christmas combination: Delicious Entrecote roast cranberry with grilled vegetables, potato gratin with truffle and Tre Filari Primitivo

Ingredients (4 people)

  • 600 g sirloin steak roast cranberry (shell)
  • 700 g potato gratin with truffle (bowl)
  • 1 courgette
  • 2 red bell peppers
  • 2 red onions
  • olive oil 2 tbsp
  • 1 baking dish (20 x 25 cm)
  • 1 grill pan

Perfect wine pairing: Tre Filari Primitivo

Preparation

  1. Remove the sirloin steak roast cranberry from the fridge half an hour before preparation and allow to come to room temperature. Meanwhile, preheat the oven to 170 °C.
  2. Put the potato gratin in the oven. Insert the pop-up thermometer from the packet into the meat. Place the sirloin steak with cranberry in the oven dish in the middle of the oven. Roast until the pop-up thermometer comes up, which takes about 40 minutes (core temperature 52 °C).
  3. Cut the courgette lengthwise into thin slices of about 0.5 cm. Cut the pepper into long strips 1 cm wide and the onions into thin wedges. Drizzle the vegetables with the oil. Heat the grill pan and grill the vegetables in portions in 3-4 min each until tender. Turn regularly with tongs.
  4. Slice the sirloin steak roast cranberry and place on a pretty platter. Place the grilled vegetables around it. Serve the potato gratin separately.

What makes the Tre Filari Primitivo a particularly delicious pairing?

Sampietrana makes wines in Salento in southern Italy. We are then in Puglia, or the heel of the boot. It gets pretty hot here in summer, but fortunately the local grapes can withstand it. With dark and firm skins that in turn produce powerful wines with accompanying tannins. The grape primitivo is the textbook example from the region. It is also wildly popular in California under the name zinfandel. With its sun-drenched character, you will recognise it by its robust character with flavours of blackberry jam, dark chocolate and mocha. You will also taste vanilla thanks to its maturation in oak barrels. All this is the reason why this special wine was rated 8.5 by the great Hamersma. Pour this Tre Filari Primitivo with hearty pasta dishes with meat or with game, lamb or casseroles. An ultimate wine therefore for your Christmas dinner.
