TOMATO SALAD WITH GRAPEFRUIT

The ultimate pairing with Sauvignon Blanc is a tomato salad with green herbs, especially if it is also complemented by grapefruit. Fresh acidity, tight flavours and aromas that completely complement those of the wine. That's 1+1=3! Extra tip: complement with fresh goat cheese, feta or burrata. Heavenly!

PREPARATION 25 MINUTES
WHAT YOU NEED (4-6 PEOPLE)
  • 500 g assorted cherry tomatoes
  • 1 red onion
  • radish bunch
  • 1 sweet pointed pepper
  • 2 white (or red) grapefruits
  • 100 g pistachios (50 g peeled)
  • handful of basil handful of mint
  • 1 tsp Provencal herbs
  • salt and pepper approximately
  • 1 tbsp olive oil
HOW TO MAKE IT

Halve the cherry tomatoes. Peel the onion and cut it into thin rings. Cut the radishes into thin slices. Halve the pepper and remove seeds. Cut into thin strips. And peel the grapefruits thickly so there are no white skins left. Cut the segments of flesh between the membranes and halve them. Peel the pistachios if necessary. Coarsely chop the basil and mint. Mix everything together in a bowl. Season with Provençal herbs, salt and pepper and olive oil.
