Cuvée ‘Grande Vallée: ‘Proef zelf maar.’

We vragen of het echt een verschil maakt in de uitkomst van de wijn; smaakt het anders? Vol plezier plopt Fabrice een fles van zijn nieuwe cuvée ‘Grande Vallée’ open en zegt: ‘Proef zelf maar.’ En terwijl hij de wijn inschenkt, vertelt hij dat de vergistingen op fles langzamer en beter verlopen. Het lijkt alsof de gisten beter overweg kunnen met deze voedingsstof. De mousse wordt zachter en beter geïntegreerd in de wijn. Ook de textuur van de wijn wordt rijker zonder de wijn langer op de gisten te laten rijpen.

We taste the wine and immediately understand what he means. The wine has the mouthfeel of a rich vintage cuvée and the mousse is soft and especially deeply woven into the wine. Something you wouldn't expect from a wine that has enjoyed less than 20 months of maturation in bottle. The conversation falls silent even as we enjoy this charming wine.
