Is the five already in the clock?

For Spaniards, late-afternoon tapas is a snack, to accompany a drink and satisfy hunger - they often don't dine until 21:00 or 22:00. With us, the drinks board can very well replace the meal, especially if you make more than cubes of cheese and slices of sausage. - RECIPE AND RECIPE TEXT: RAMON BRUGMAN | PHOTOGRAPHY: MITCHELL VAN VOORBERGEN | INTRODUCTION TEXT AND WINE TIPS: MARJOLEIN SCHUMAN

Is the five already in the clock?

If you are a lover of wine, you are often also a lover of appetisers. At least at the editorial office, we all are, and every day it is patience until the five is in the clock, traditionally meant to indicate that alcohol can be drunk after 5pm. That is also why the Drinks Bible by Ramon Brugman ready next to our wine fridge. Among the things we chose from this reference work on a Friday afternoon were a cocktail with chips, and two dishes with fish to make. They turned out well and our evening was immediately packed! We may share the recipes in WINELIFE.

Oven chips

This is what you need

  • 1-2 potatoes (1 potato is about 1 baking dish)
  • 2 tbsp oil (groundnut or sunflower)
  • salt

This is how you make it

Preheat the oven to 170°C. Peel the potato, cut it into thin slices and rinse them in plenty of cold water until the water runs clear. Drain the potato slices and pat them dry. Place the potato slices in a bowl and pour 2 tablespoons of oil over them. Mix well and spread the slices on a baking tray lined with baking paper. Sprinkle the potato slices with a little salt. Slide the baking tray into the centre of the oven, bake the potato slices for 8 to 10 minutes, turn and bake for another 6 to 10 minutes. Let the chips cool on the baking tray.
