We had the great pleasure of speaking to Stéphane Tissot, a true wine rock star from France's Jura region. He was in the Netherlands for the first time to host a tasting. We join him the night before at Amsterdam's Café Parlotte, where he takes us through his love for the Jura wine region. - TEXT + IMAGE NIEK BEUTE

Who is Stéphane?

At 51, Stéphane is a seasoned winemaker. After studying in Beaune and working time in Australia in South Africa, he joined his parents' business. 'I have seen the Jura transform over the past 30 years, Stéphane says. Where his parents sold their wines only in the local market and only the famous sous-voile-producing wines - wines aged under yeast culture - Stéphane sells 60 per cent of his wine abroad. He also makes most of his wines without maturing under yeast culture, which used to amount to swearing in the cellar.

What is the most work?

Stéphane proudly explains that he and the Pignier estate were the first to go biodynamic. It is an incredible amount of work, and to do this he employs as many as 25 people, with the aim of making the most vibrant and pure wine.
