Steak with fries, it always tastes good! And extra tasty with a glass of Cabernet Franc alongside. The fresh fruit in the wine makes it less heavy.

PREPARATION 10 MINUTES

WHAT YOU NEED (4 PEOPLE)

  • 50 g butter
  • 4 125 g steaks at room temperature
  • salt, freshly ground pepper

HOMEMADE MAYONNAISE

  • 1 fresh egg yolk
  • 1 tbsp French mustard
  • 2 tbsp white wine vinegar
  • salt, freshly ground pepper
  • worcestershire sauce
  • tabasco

HOW TO MAKE IT

First make the mayonnaise. Put the egg yolk, mustard, vinegar and 2 tbsp lukewarm water in a narrow (!) measuring cup (1.5 litres). Put the head of the hand blender in and then slowly add the oil. The oil should remain separate from the ingredients at the bottom of the measuring cup. Turn on the hand blender and, as soon as you see mayonnaise forming, pull it up very slowly until a thick mayonnaise forms. Season with salt, pepper, Tabasco and Worcestershire sauce. Heat a knob of butter. Season the steaks with salt and pepper. Fry them for about 3 minutes on each side, then they will be saignant (medium rare). If you prefer them more well done, fry them 1 to 2 minutes longer on each side. Remove the meat from the pan and let it rest under aluminium foil.
Serve with fries, head lettuce and the homemade mayonnaise.
