Reception

A catered dinner with an overnight stay at a hotel, a chef at home preparing a four-course menu; that's how we don't lose sight of our favourite hospitality industry during the lockdown! For February, we booked the Valentine's menu at Waterproef.

Theory

We call owner Yves van Westreenen, who assures us that we can put this culinary four-course menu on the table at home with just a few small actions. Since we suspect the preparation will go even smoother with a glass on, we quickly order the wine package to go with it. Did we want everything delivered to our homes on 14 February? We think it would be nice to pick it up and see our host live.

Instructions

Our goodie bag is waiting for us at the snow-covered restaurant on Scheveningen Harbour. The ingredients are numbered by course and the accompanying writing easily guides us through it later. But how do the chefs get such a layered turret tight without tweezers?

Taste

Layers of corvina (a perch-like fish) pickled in blood orange, interspersed with layers of fennel salad and fresh herbs. Topped with blood orange segments for acidity and some crunch for bite. Around it a sweet and sour vinaigrette gluing the flavours together. That vinaigrette... we are still tasting it days later! Sensational as a fresh champagne with lime. It makes wine almost superfluous, but Sylvain Fadat isn't winemaker of the year 2021 for nothing. His blend of white grapes called d'Aupilhac gives us flowers, green herbs, lemon and anise, which enhance the fennel and tarragon in the dish. What a good start!
