Perfect goulash soup

Delicious goulash soup based on a recipe by Marc Huibers (de Volkskrant). A soup fit for winter days. Of course, with a glass of Merlot alongside. Easy to make.

Preparation: 15 minutes + 30 minutes

What you need (4 people)

  • 3 large onions, chopped
  • 2 tbsp olive oil
  • 500 g fresh pork sausage (preferably fennel sausage)
  • 4 cloves of garlic, chopped
  • 1 tbsp kummel (ground caraway seeds)
  • 1 tbsp ground cumin
  • 1 tbsp smoked paprika
  • 2 red peppers, chopped
  • 400 g peeled tomatoes (1 can), in pieces
  • 400 g firm potatoes, diced
  • 1,200 ml beef stock
  • 150 g crème fraîche

This is how you make it

Fry the onions with some olive oil in a frying pan over high heat until they start to colour. Squeeze the sausage meat out of the skin and add to the onions. Stir briefly so that the meat becomes loose. Add garlic, caraway, cumin and paprika and fry briefly. Then transfer everything to a large soup pan. Then add: peppers, tomatoes, potatoes and stock. Bring to the boil. Turn down the heat to low and simmer gently for at least 30 minutes (longer is tastier). At the table, spoon the crème fraîche on top of the soup. Serve this soup paired with a cheese platter, baguette and herb butter for a complete meal.
