You can use champagne, but it’s not essential for making a sparkling cocktail.
You will need this:
1 blood orange, thinly sliced
1 pink grapefruit, thinly sliced
2 sprigs of lemon thyme
(1 to 2 tablespoons of sugar)*
150 ml (red) vermouth
1 blood orange, juiced
ice cubes
500 g red fruits (blackberries, strawberries, pomegranate, raspberries)
1 bottle of sparkling rosé
Coin leaves
Here’s how to make the bubbly sangria:
Place the orange and grapefruit slices at the bottom of a glass jug. Arrange the sprigs of lemon thyme among them. (Sprinkle the sugar over the top.) Pour the vermouth and orange juice over the fruit. Leave to stand for at least an hour. Before serving, add ice cubes and red berries and stir gently. Pour the sparkling rosé over the top. Garnish with mint leaves.
*You can also leave out the sugar if you don’t like things too sweet.
