Pruning, bending and tying. Winter is not always a rest period for the vines. The most experienced staff at each winery do winter pruning in early January and then canopy management: managing the foliage of the vines until harvest. Every cut and every knot of shoots on the horizontal plant guides helps determine what the grape harvest will look like later on.

We are on the hills surrounding the ancient walled town of Asolo, 30 kilometres above Venice. An enchanting place where some of Italy's sparkling wine prosecco is born. Since 2009, this area of origin has been a DOCG, the top of the quality pyramid. The wines are mainly produced by some 50 small (family) farms.
