Pink bubble

Why wait until the turn of the year? We can drink champagne all year round, and this rosé fits the summer bill.

Walter Cramer of champagne house Laurent Perrier poured it and told us that it is made from 100 per cent pinot noir. And that its salmon-pink colour comes from the saignée method, after the French word for bleeding. The pinot noir lies in an open barrel briefly on the skins and the juice that runs off has then very gently taken on some colour. Special, because most other champagne houses blend their rosés - indeed, in the Champagne region you are allowed to pour red and white wine together. After five years of maturing in bottle, the rosé champagne is ready. We tasted a fresh wine with strawberries, raspberry and black cherries, with a lovely creamy finish. Seems good to have a snack with this, something with fish, butter and salt or just a semi-sweet dessert.
