Blending your own wine

The second Wine Making Challenge in the Netherlands was won by sommelier Tim Theuns of Pure C restaurant in Cadzand. The trick was to create a blend of Spanish monocepages from winery Pago Casa del Blanco, at the initiative of Dutch importer Vinos QuiXote. Tim Theus kept in mind that the wine had to be interesting to serve in his restaurant ('and drink through!') and beat the four other participating sommeliers with his blend for Pure C. What was in it? Sixty per cent Cabernet Sauvignon complemented by Petit Verdot, Tempranillo and Merlot. He can really start pouring it next year, as a thousand bottles of the bastard child will be made. Last year, Lendl Mijnhijmer (pictured left, next to winner Tim Theus) won the challenge; his winning wine was ready this summer.
