'It's time for pet-nat again! Although, it's always time for cap-nat. But so with spring breaking through, the sun back, the good mood: that's when such an authentic, cheerful bubbler goes in extra. Pétillant natural, also known as méthode ancestrale, is the primal form of sparkling wine. A single fermentation in the bottle, unfiltered and artless. More often wild, rugged and heady. Can come in any colour, from any wine country. I tip one from France, made from syrah: Les bulles du bontemps from Clos Rocailleux. A delightful natural wine project by Luc Bontemps and Lucinda Terreyre who make their wines from well-known and unknown grape varieties near Gaillac (Sud-Ouest). With this festively pink and airy parade of strawberries and raspberries, they colour just outside the lines so the provenance appellation is Vin de France. Soit. I'm looking forward to it (already).'
