This dynamic Italian company in Trentino previously released four other intriguing herbal drinks on the market. Number five comes in the same sturdy wine bottle with crown cap and completes the series. The name Feral means ‘back to the wild’ and this natural bubble exudes exactly that. It is made from fermented birch sap and plants you would normally think of as weeds, such as yarrow and nettle. Add some horseradish and black chokeberry (aronia) and you get a sparkling fresh drink with spicy and earthy notes. Not comparable to non-alcoholic wine, but it does fit perfectly with everything that is culinary right now. Serve it with vegetarian tempura or Asian bites: success guaranteed.
