Even in spring, you occasionally crave a hearty glass of wine. This wine is a blend of mainly nebbiolo, a quarter cabernet sauvignon and merlot, ten per cent pinot noir and a little syrah. Drink this wine especially at the table with anything that flew, so duck breast fillet or guinea fowl. But Italian-tinged veal ravioli with truffle, pasta with game (sauce) also tastes great with it.
Note that it is important to season it a little higher, otherwise the wine will knock out your dish.
