It is somewhat in the shadow of its big brother pinot noir, yet the white pinot blanc is also well worth a look. It is increasingly common on the shelf, which is why it plays the starring role in our buying guide. Pinot blanc is sometimes a bit timid in nature, depending on how it is made and where it comes from. It usually tastes nice and soft, fresh and fruity, but if the juice is given a while more to mature on its lees, the wine actually gets a fuller body, a creamier mouthfeel and extra complexity in aroma and flavour. That is exactly what happened to this wine. During six months of lie maturation, aromas of candied fruit, nuts and a fine acidity developed in the wine.
Drink it with seasonal vegetable number one, asparagus. Work it into a risotto, serve a fish with it and your meal can't go wrong.
